Forschner Fillet knives are some of the finest available for cleaning
trout and salmon. We presently stock the 3 most popular sizes which all
serve the same purpose. We recommend the the longer blade (10 or 12")
if you prefer to cut through the rib cage as you fillet. If you prefer
to leve the rib cage intact, the shorter blade is the best choice.
About these Fillet knives
R.H. Forschner, a division of Swiss Army Brands Inc., has been in business
manufacturing quality cutlery since 1855. Their blade, a high carbon stainless
steel hand finished at Victorinox® in Switzerland, is made using a
special tempering process to produce an edge that can be sharpened over
and over again. All of the handles are ergonomically designed to minimize
wrist tension. . The curved blades allow for a better working angle when
